Just about every ceiling fan here in the USA is 120 vac single phase.  Everyone just buys ceiling fans at large department stores like WalMart, K-Mart, Lowes, Home Depot or even smaller lumber yards or hardware stores.  Most motors are wound for three speeds and come with a switch to select the speed.  These fans are very low horsepower, maybe 1/6 or 1/8.  If you are going to actually make your own, keep it small and low speed.  You don't want it to heavy.
